Chocolate Peanut Butter Truffles

What you need

¾ cup Simply Nuts Smooth Peanut Butter

8 pitted Medjool dates, soaked in hot water for 10 minutes to soften

½ cup coconut flour

2 tbsp water

1 cup 70% cocoa dark chocolate, chopped (or vegan chocolate of choice)

Top with sea salt flakes, crushed peanuts or a drizzle of peanut butter

These truffles will store in the refrigerator for a few weeks, or the freezer for longer!

Not only are these Chocolate Peanut Butter Truffles delicious, but they’re also super easy to make with just 5 ingredients!


Step 1.

Combine peanut butter, dates, coconut flour and water in a food processor and blend.

Step 2.

Roll into tablespoon-sized balls and place on a baking tray. Cool in the freezer while you melt the chocolate.

Step 3.

Place the chocolate in a microwave-safe bowl and heat in 20-second increments, stirring between each, until the chocolate is fully melted.

Step 4.

Using a spoon or fork, dip each ball into the melted chocolate, letting the excess drip off before placing on a tray, lined with baking paper. Sprinkle with your desired topping while the chocolate is still melted.

Step 5.

Transfer to the refrigerator to set.
