The Crunchiest Nut Slice

What you need

BASE

¾ cup peanuts

10 fresh dates (soaked in boiling water and drained)

Pinch of salt

1 tsp coconut oil, melted

FILLING

½ cup Bega Simply Nuts The Crunchiest Peanut Butter

2 tbsp rice malt syrup

3 tbsp coconut oil, melted

Pinch of salt

½ cup peanuts

TOPPING

75g melted dark coconut chocolate

½ cup Picky Picky Savoury Honey Roasted Peanuts (available in Coles and all good Independent Supermarkets)

Instructions

Step 1.

Line a square cake tin with baking paper, allowing the sides of the baking paper to overhang. Set aside.

Step 2.

To make the base, process peanuts, dates, coconut oil and salt in a food processor until well combined. Press into the base of the lined cake tin.

Step 3.

Combine all filling ingredients and mix well until combined.

Step 4.

Pour filling mixture over the base layer. Place in the freezer to set.

Step 5.

To make the topping, melt chocolate in the microwave until just melted. Pour over the filling and sprinkle with peanuts.

Step 6.

Allow to set in the freezer for 1-2 hours before cutting.

Step 7.

Store in the fridge or freezer in an air-tight container.
