Satay Chicken Sausage Rolls

What you need

– 1 brown onion, coarsely grated

– 500g chicken mince

– 1/2 cup Bega Crunchy Peanut Butter

– 1 cup fresh breadcrumbs

– 1 tbsp fish sauce

– 1 1/2 tsp garlic powder

– 2 eggs, lightly beaten

– 3 sheets frozen puff pastry, partially thawed, halved

– Salted peanuts, very finely chopped, to sprinkle

– Sesame seeds, to sprinkle

SATAY SAUCE

– 1/2 cup Bega Crunchy Peanut Butter

– 1/4 cup lime juice

– 1 1/2 tbsp soy sauce

– 1 1/2 tablespoons dark brown sugar

– 1 tbsp chilli garlic sauce

– 1 1/2 tbsp boiling water

Instructions

Step 1.

Preheat oven to 220°C/200°C fan-forced. Line 2 baking trays with baking paper.

Step 2.

Squeeze excess liquid from grated onion. Place onion in a large bowl with mince, Bega Peanut Butter, breadcrumbs, fish sauce, garlic powder and half the egg. Season with salt and pepper. Using hands, mix thoroughly.

Step 3.

Place 1/6 of the filling along 1 long side of 1 pastry half. Roll up pastry to enclose filling. Cut into 3 pieces. Place, seam-side down, on prepared trays. Repeat with remaining filling and pastry. Brush with remaining egg. Sprinkle with peanuts and sesame seeds. Bake for 25 to 30 minutes or until pastry is golden and puffed.

Step 4.

Meanwhile, make Satay sauce Using a fork, combine all ingredients together in a small bowl. Serve sausage rolls with dipping sauce.
