Chicken Schnitty Nutty Bites
Add these chicken schnitty nutty bites to your next party menu, guaranteed to be a crowd-pleaser!
Combine breadcrumbs and peanuts on a plate. Season with salt and pepper.
Working with 1 piece of chicken at a time, place between 2 sheets of baking paper. Using a rolling pin, pound until 5mm thick. Spread one side of chicken with some of the peanut butter. Place peanut butter-side down in breadcrumb mixture, pressing to secure. Spread remaining side of chicken with peanut butter. Press into breadcrumb mixture. Set aside. Repeat with remaining chicken, peanut butter and breadcrumb mixture. Cut chicken into 3 to 4cm pieces. Toss chicken pieces in any remaining breadcrumb mixture.
Heat oil in a frying pan over medium-high heat. Cook chicken, in batches, for 1 minute each side or until golden and cooked through. Transfer to a plate lined with paper towel to drain. Serve immediately with sweet chilli sauce.
